1/3 c Reduced-calorie margarine, melted
Brown sugar substitute to = 1/4 c Brown sugar
Sugar substitute to = 1/4 c Sugar
1 Egg
1 1/4 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Ground cinnamon
1/3 c Raisins
2/3 c Unsweetened orange juice
Vegetable cooking spray
Combine margarine, sugar substitutes, and egg; beat at high speed
of an electric mixer 2 minutes.
Combine flour, baking powder, soda, and cinnamon, stirring to
blend. Stir in raisins.
Add flour mixture to creamed mixture alternately with orange juice,
beginning and ending with flour mixture. Beat at low speed of an
electric mixer after each addition.
Spoon batter into an 8-inch square baking pan coated with cooking
spray. Bake at 350 degrees for 25 to 30 minutes or until a wooden
pick inserted in center comes out clean. Cut into squares to serve.
