Rhubarb Cake

4 c. diced rhubarb
1/2 c. shortening
2 1/2 c. sugar (1 c. for rhubarb, 1 1/2 c. for batter)
1 egg
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking soda
1 c. sour milk
2 c. flour

Mix rhubarb and 1 cup sugar. Set aside. Heat oven to 350 degrees. Grease and flour rectangular pan. Beat all ingredients on low speed. Scraping bowl constantly until blended, about 1 minute. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan. Bake until toothpick inserted in center comes out clean. About 1 hour.
