Pumpkin Cake

2 c. sugar
2 c. flour
2 tsp. baking powder
2 tsp. soda
1/2 tsp. salt
2 eggs
1 1/2 c. Wesson oil
1 1/2 c. pumpkin
2 tsp. vanilla
1 tsp. cinnamon (may omit, if desired)
Icing:
1 box powdered sugar (3 1/2 c.)
1 (8 oz.) pkg. cream cheese
1 stick oleo, room temperature
1 tsp. vanilla
1 tbsp. butter extract (may omit)

Mix dry ingredients; add oil, eggs, vanilla and pumpkin. Bake in 3 layers at 350 degrees for 45 minutes. Grease and flour pans well. A really moist cake. Mix and add 1 cup pecans.
