Pennsylvania Dutch Apple Pie Cake

1/2 c. shortening
2 c. granulated sugar
2 eggs
2 tsp. vanilla
2 c. flour
2 tsp. soda
2 tsp. nutmeg
1 tsp. salt
2 tsp. cinnamon
4 tbsp. hot water
5 c. apples, peeled and cut in chunks (5-6 apples)
1/2 to 1 c. raisins
1/2 to 1 c. chopped nuts

Cream shortening and sugar, beat in eggs and vanilla. Sift all dry ingredients together, and beat half of dry ingredients into creamed mixture. Stir in 2 tablespoons hot water and mix well. Add rest of dry ingredients and 2 tablespoons water, blend well. Fold in raisins, nuts and apples. Coat them well with batter. Spoon batter into greased and floured 9x13x2 inch pan. Spread evenly with wet spoon. Bake at 350 degrees for 60-70 minutes. Serve from pan.
