Peanut Butter Cupcakes

1 3/4 c. flour
1 c. milk
3/4 c. sugar
1/2 c. creamy peanut butter
1/4 c. shortening
1 tbsp. baking powder
3/4 tsp. vanilla
1/2 tsp. salt
2 eggs

Heat oven to 350 degrees. Grease muffin tin or use paper baking cups. Measure and mix all ingredients at low speed on mixer. Increase speed and beat for 2 minutes. Spoon into cups and bake 20 minutes. Cool in pan 10 minutes. Remove from pan and cool completely, if desired, frost with your favorite frosting recipe, but kids love these plain. Variation: Just before spooning into muffin cups, fold in chocolate chips.
