German Date-nut Cake

1 lb. pitted dates
1 lb. pecans
1 c. sugar
1 c. plain flour
2 tsp. baking powder
5 eggs
1 tsp. vanilla

Put dates and nuts in large mixing bowl. Sift over them the flour, sugar, and baking powder. Mix well, using hands. Beat egg yolks. Stir mixture using spoon at first, then toss with hands until egg is well mixed with the flour. Beat egg whites stiff. Fold into mixture. Add 1 teaspoon vanilla. Pour into 2 wax paper-lined loaf pans and bake at 300 degrees for 1 hour. Allow to cool, remove loaves. Wrap in aluminum foil. It freezes well; or may be refrigerated for as long as 3 months.
