Domed Cheesecake

2 ts Grated ginger OR orange zest
2 lb Cream cheese
1 1/2 c Sugar
3 Eggs
2 Eggs separated
1 ts Vanilla
Garnish whipped cream and fresh berries

Take a metal round mixing bowl and line the insides of the bowl with plastic wrap which extends over the sides of the bowl. Beat cream cheese till fluffy. beat in sugar till fluffy with orange or ginger. Beat in 3 whole eggs plus 2 yolks one at a time to blend.Beat whites stiff and fold into mixture. Place filling in lined bowl. Cover top of bowl with foil. Place bowl in another pan filled with a few inches of water. Bake 350 for 1 hour or until center is set. remove bowl from water bath and cool and chill completely. For presentation: invert bowl onto a platter to carefully release cake. Pipe on whipping cream around the cake and garnish with fresh raspberries.
