Coffeecake

3 c. flour
2 c. sugar
3 tsp. baking powder
2 eggs, separated
4 tbsp. butter
1 1/2 c. milk
Pinch salt

Put flour and sugar together. Work in butter to make crumbs. Take out a handful of crumbs for top of cake. To remaining crumbs add slightly beaten egg yolks and milk. Add baking powder and salt. Beat egg whites stiff and stir in last. Place in greased and floured oblong pan. Sprinkle top with the remaining crumbs. Sprinkle with cinnamon and dot with butter. Bake for 3/4 hour in 350 degree oven. Can also put sliced apples in dough before putting crumbs on top. Makes 1 large or 2 small cakes.
