Cherry-Cheese Cupcakes

3 (8 oz.) pkgs. cream cheese, room temperature
2/3 c. sugar
3 eggs
1 tsp. vanilla
1 (12 oz.) box vanilla wafers
1 (20 oz.) can Lucky Leaf Lite cherry pie filling
1 pkg. cupcake papers (or foils)

Mix the first 4 ingredients well. Place wafer on bottom of cupcake papers (or foils). Fill to 3/4 with the mix. Bake 15 minutes in preheated 350 degree oven. Allow to cool. Spoon on cherry pie filling. Keep refrigerate until serving time. Makes 2 to 2 1/2 dozen cupcakes.
