Brother Rabbits Carrot Cake

3 c. finely grated carrots
2 c. sifted flour
1 tsp. soda
1 tsp. pumpkin allspice
1 1/2 c. Wesson oil
1 tsp. salt
2 c. sugar
1 tsp. vanilla
1 c. walnuts
4 egg yolks, beaten
4 egg whites, stiff

Combine all ingredients, folding in stiffly beaten egg whites. Bake in 2 bread loaf pans. Bake at 350 degrees for 50-60 minutes or until done.
