Apple and Pecan Cake

150 g Softened butter
1/2 c Sugar
2 Eggs
2 c Flour
1 ts Baking powder
1 ts Baking soda
1/4 c Milk
2 c Sliced apple
1 ts Cinnamon
1/2 ts Mixed spice
1/2 c Raw sugar
1/2 c Chopped roasted pecan nuts

Melt butter in a saucepan or bowl large enough to mix all the ingredients. Add sugar and eggs and mix until combined.

Sift flour, baking powder and baking soda together. Combine butter mixture, milk and apple slices and flour mixture together.

Pour half the mixture into a greased and lined 23cm x 11cm loaf tin.

Mix cinnamon, mixed spiced, sugar and nuts together. Divide mixture in half and sprinkle one amount over half the cake mixture. Top with remaining cake mixture and top with remaining cinnamon mixture.

Bake at 180 degrees C for 1 hour or until an inserted skewer comes out clean.
