8 Egg whites
1 ts Almond extract
1/2 ts Cream of tartar
1/2 ts Salt
2/3 c Sugar
3/4 c All-purpose flour
1/3 c Sugar
1/2 c Flaked coconut (sister says to use ground walnuts)
1 c Chocolate chips
1 c Mini-marshmallows
2/3 c Evaporated milk
1 c Heavy cream, whipped
Beat first four ingredients to soft peaks. Add sugar gradually and
beat to stiff peaks. Fold in flour, coconut, and sugar. Spread on
greased and floured cookie sheets to make three 8" circles and one
approx. 2" circle. Bake at 300 for 25-30 min. Remove from sheets
immediately. Cool.
Mix chocolate, marshmallows, and milk in top of double boiler. Heat
until melted. Chill. Fold in whipped cream.
Stack large layers, spreading filling between them and over the top.
Cap with small layer. Chill 6-8 hr.
