Bolo Podre / Rotten Cake 350 g Flour, wholemeal [12oz]
1 1/2 ts Baking powder
300 ml Olive oil [1/2 pint]
300 ml Honey, dark [1/2 pint]
4 Eggs
3 tb Brandy [or equivalent.]
1/2 Coffeespoon Cloves, ground
1 tb Cinnamon
1 Handful of Almonds, peeled, for decoration.
Mix all ingredients except the flour and the almonds, and beat until
it thickens. Using an electric mixer saved effort. Gradually add the
flour and baking powder. Beat again. Leave to rest until the
following day.
Pour the mixture into a large, well-buttered cake tin [20 to
22.5cm/8-10inch] in diameter or use two smaller tins. Decorate the
top with the almonds and bake at 180^C/350^F for 45 minutes or until
