Carrot Pineapple Fruitcakes

3 c Unbleached flour
1 tb Baking powder
2 ts Cinnamon
1 ts Baking soda
1/2 ts Nutmeg
1/2 ts Cloves
1/2 ts Salt
1 c Applesauce -- at room temperature
3/4 c Granulated sugar
3/4 c Brown sugar -- packed
4 Egg whites -- whipped
1 ts Vanilla
2 c Carrots -- grated 1 20 oz can
Powdered sugar icing
Pineapple -- crushed/drained

Preheat oven at 350. Prepare 2 loaf pans with cooking spray and flour. In a mixing bowl combine flour, baking powder, cinnamon, baking soda, nutmeg, cloves, and salt. In another mixing bowl, combine applesauce, sugars, egg whites, vanilla, carrots, and pineapple. Mix dry ingredients with wet ingredients just until moistened. Divide batter equally between prepared pans. Bake for 55 minutes. Brush with powdered sugar icing and decorate as desired.
