1/4 c Sugar
2 tb All-purpose flour
2 ts Orange rind; grated
1/2 ts Ground cinnamon
1 tb Margarine
16 1/2 oz Light wild blueberry muffins
3/4 c Fresh orange juice
1 ts Vanilla extract
1 Egg white
Vegetable cooking spray
Combine sugar and next 3 ingredients in a bowl; cut in margarine
with a pastry blender until mixture resembles coarse meal. Set aside.
Remove blueberries from muffin mix bos. Drain and rinse blueberries,
and set aside.
Combine muffin mix and next 3 ingredients in a bowl, strring just
intil dry ingredients are moistened. Gently fold in blueberries. Pour
batter into an 8-inch square baking dish coated with cooking spray.
Sprinkle sugar mixture over batter.
Bake at 400 for 25 minutes or until a wooden pick inserted in center
comes out clean. Cool in pan on a wire rack.
