Irish Fruitcake

8 oz Plain flour
2 oz Chopped mixed fruit peels
1 ts Baking powder
1 ts Ground mixed spices
2 tb Milk
2 Eggs
1/2 Orange rind, grated
10 oz Mixed dried fruit
5 oz Castor sugar
5 oz Butter or margarine

Place all ingredients in a mixing bowl and beat with a wooden spoon for about 3 minutes, until well blended. Turn into a greased and lined 7 inch cake tin and bake in a cool oven (300F; gas mark 2; 150C) for about 1 3/4 hours, or until a fine skewer inserted comes out clean.Leave in tin for 5 minutes and then turn out on a wire rack, strip off the lining paper and cool.
