Coffee Crumb Cake 1 1/2 c Flour
1/2 c Flour, soya
3/4 c Sugar, brown
1/2 t Salt
1/3 c Shortening
1 t Cinnamon
3 t Baking powder
1/8 t Baking soda
1 Egg
1/2 c Coffee, cold
1/3 c Nuts, chopped
Sift all dry ingredients together, except for soda and baking powder. Cut
in shortening until mixture resembles coarse corn meal. Reserve
1/2 cup of mixture for topping.
To the remainder, add soda and baking powder and mix thoroughly with a
fork. Beat egg, add coffee, and combine with flour mixture.
Pour into a 9" greased pie plate and sprinkle with the 1/2 cup of crumbs
and chopped nuts.
