Micro Cake From Jiffy Mix

1 pk Jiffy cake mix
2 x Eggs
6 tb Instant pudding mix
1/4 c Margarine (softened)
1/2 c Water
1 ts Vanilla (optional)

Beat 3 minutes by mixer or 300 strokes by hand. Pour into a lightly greased 8" round glass cake pan or micro cake pan. Bake for 8 - 9 minutes or until a toothpick inserted comes out dry. This on "Roast" or "Medium- High" .. Cool 5 minutes before turning onto serving dish. Cool completely before frosting.
